Pancakes moelleux au matcha

Fluffy matcha pancakes

Ingredients (Makes about 8 pancakes) :

  • 150 g flour
  • 1 tsp matcha powder (2 g)
  • 25 g sugar
  • 8 g baking powder
  • 2.5 g salt
  • 240 g milk
  • 28 g melted butter or vegetable oil
  • 1 egg
  • 14 g oil for cooking

 

Instructions :

1. Prepare the batter

Sift the flour, matcha, baking powder, and salt into a bowl. Add the sugar and mix well.

In a separate bowl, whisk the egg with the milk and melted butter (or oil).

Pour the wet ingredients into the dry ingredients and gently mix with a fork until just combined. Don't overmix—it's okay if there are a few lumps!

2. Let the batter rest

Cover the bowl and let the batter rest for 15 minutes. This step makes the pancakes extra fluffy.

3. Cook the pancakes

Heat a lightly oiled pan over low-medium heat. Pour a small ladle of batter and cook until bubbles start to form on the surface. Flip and cook for a few more seconds until golden brown.

Repeat with the remaining batter.

4. Enjoy

Serve warm with honey, maple syrup, or fresh fruit.
