Matcha filled biscuits

Ingredients:

For the biscuits:

  • 130 g of butter
  • 70 g of powdered sugar
  • 220 g of flour
  • 30 g of almond flour
  • 15 g of matcha powder
  • 1 egg

For the filling:

  • Strawberry or raspberry jam
  • Or chocolate ganache

 

Preparation:

1. Prepare the dough:

In a large bowl, sift together the flour, almond flour, matcha powder, and powdered sugar. Add the butter, cut into small pieces, and rub the mixture between your fingers until it resembles breadcrumbs. Then, add the egg and mix until the dough comes together smoothly.

2. Chill the dough:

Form the dough into a ball, wrap it in plastic wrap, and refrigerate for at least 1 hour.

3. Shape the biscuits:

Roll out the dough between two sheets of parchment paper to a thickness of about 4 to 5 mm. Refrigerate it for a few more minutes to firm it up and make cutting easier.

4. Cut out the biscuits:

Use a cookie cutter to cut out about 32 circles. On half of the biscuits, use a small heart-shaped cutter (or any other shape) to create a hole in the center, leaving room for the filling to show through.

5. Bake:

Preheat the oven to 145°C (290°F). Arrange the biscuits on a baking sheet lined with parchment paper and bake for 15 minutes. Let them cool completely on a wire rack.

6. Assemble the biscuits:

Once the biscuits have cooled, spread a thin layer of jam or chocolate ganache on the flat side of the whole biscuits. Top with the biscuits that have the cut-out centers to form delicious sandwich cookies.

7. Optional finishing touch:

For an extra indulgent touch, lightly dust the biscuits with powdered sugar.
