Matcha latte with black sesame foam

Ingredients (for 1 serving):

Matcha latte :

  • 2-3 g of matcha
  • 60 ml of warm water (70-80 °C)
  • 80 ml of cold milk
  • Ice cubes

Black sesame foam :

  • 50 ml of heavy cream (well chilled)
  • 1 tsp of syrup (optional, for sweetness)
  • 1 tsp of ground black sesame seeds (or black sesame paste)

Steps :

1. Prepare the matcha latte

  • Sift the matcha into a bowl to avoid lumps.
  • Add the warm water and whisk vigorously using a chasen (bamboo whisk) or an electric frother until you achieve a light foam.
  • Fill a glass with ice cubes, pour the cold milk over the top, and add the prepared matcha mixture. Set aside.

2. Make the black sesame foam

  • Combine the chilled cream with the ground black sesame in a suitable container.
  • Whisk using a frother until you achieve a light and firm foam.
  • Add syrup if you prefer a sweeter foam.

3. Assemble your latte

  • Gently pour the black sesame foam over the matcha latte.
  • Garnish with a pinch of black sesame powder or a few whole seeds for decoration.

Tips :

  • For a hot version, swap the cold milk for warm milk.
  • Adjust the amount of syrup and black sesame to suit your taste.
  • Enjoy immediately to savor the contrast of flavors and textures.
