Matcha tiramisu

Ingredients (for 4 people):
- 250 g mascarpone
- 3 eggs
- 60 g sugar
- A pinch of salt
- About 20 ladyfingers (for extra flavor, make them homemade with our matcha ladyfinger recipe)
- 4 g UMIKA culinary matcha
- 120 ml water
Preparation:
- Start by preparing the matcha: mix 4 g of matcha with 120 ml of hot water and let it cool while you prepare the rest of the recipe.
- Separate the egg whites from the yolks.
- In a bowl, whisk the yolks with the sugar until the mixture turns pale.
- Add the mascarpone and mix until smooth.
- Beat the egg whites with a pinch of salt until stiff peaks form, giving lightness to the cream.
- Gently fold the egg whites into the mascarpone mixture in three batches, using a spatula to keep the mixture light and airy.
- Quickly dip the ladyfingers in the cooled matcha, being careful not to soak them.
- Arrange a first layer of dipped ladyfingers at the bottom of your serving glasses or dish.
- Cover with a layer of mascarpone cream.
- Repeat the process to create a second layer of dipped ladyfingers and cream.
- Let chill in the fridge for at least 4 hours before serving.
- Just before serving, lightly dust with matcha powder for decoration, adding an elegant final touch.
