Tiramisu au matcha

Matcha tiramisu

Ingredients (for 4 people):

  • 250 g mascarpone
  • 3 eggs
  • 60 g sugar
  • A pinch of salt
  • About 20 ladyfingers (for extra flavor, make them homemade with our matcha ladyfinger recipe)
  • 4 g UMIKA culinary matcha
  • 120 ml water

 

Preparation:

  1. Start by preparing the matcha: mix 4 g of matcha with 120 ml of hot water and let it cool while you prepare the rest of the recipe.
  2. Separate the egg whites from the yolks.
  3. In a bowl, whisk the yolks with the sugar until the mixture turns pale.
  4. Add the mascarpone and mix until smooth.
  5. Beat the egg whites with a pinch of salt until stiff peaks form, giving lightness to the cream.
  6. Gently fold the egg whites into the mascarpone mixture in three batches, using a spatula to keep the mixture light and airy.
  7. Quickly dip the ladyfingers in the cooled matcha, being careful not to soak them.
  8. Arrange a first layer of dipped ladyfingers at the bottom of your serving glasses or dish.
  9. Cover with a layer of mascarpone cream.
  10. Repeat the process to create a second layer of dipped ladyfingers and cream.
  11. Let chill in the fridge for at least 4 hours before serving.
  12. Just before serving, lightly dust with matcha powder for decoration, adding an elegant final touch.
